I saw a recipe for Oreo peanut butter blondies on a blog I found this weekend. Naturally I haven't stopped thinking about them since and tonight I did something about it.
I made classic blondies to recover from my awful dinner. I made eggplant parm and it was gross. The sauce I made was good and so was the cheese (when is cheese ever bad?) but the eggplant tasted like earth.
I've had really good experiences cooking for myself so far, so I'm ok with having a dish or two not turn out great. I'm fortunate to have other things to eat (like blondies).
One of my goals for February is to try a new thing each week. Looks like I'll have to spend a bunch of time on Pinterest.

Trying new things
I tried quinoa for the first time for dinner last night and finished the rest off for lunch today. I will definitely be making it again. It's one of the nicest things to come home for lunch in the middle of the day. I'm an avid lunch bringer and last semester I brought it almost every day. Now my schedule allows me to come home a couple days a week. And maybe take an after lunch nap...

Sunday, lovely Sunday
I spent my last Sunday at home in the kitchen with my dad. He gave me a cooking class for Christmas and we recreated the dishes.
(The class was awesome. The food was great and I got to hang out with fellow food lovers- always a good time!)
Our menu:
Tomato and artichoke soup with asiago croutons: This is the perfect winter soup. If I liked wine, I bet it would be good with something like this. Also, I went heavy on the croutons and I'm not sorry. I also ate the equivalent of 3 pieces of bread while making them. Gym tomorrow?
Pork tenderloin with a mango bourbon glaze: I'm not a huge pork fan, but I actually really liked this. It was sweet, but also savory. My dad did all the work on this one. We also have a ton of leftover bourbon. I'm selling it for $10.
Warm chocolate pudding cake with Kahlau whipped cream: If you're ever feeling sad, or mad or happy or tired or if it's raining or Monday or you're having any feelings at all, I would recommend just eating the whipped cream straight.
P.S. I had some white wine with dinner. I hated it. It did make me look cool and sophisticated though.
